Cheesy Chicken Hotdish

  • 4 Tbsp. margarine
  • 2 c. milk
  • 1/2 tsp. sage
  • 1/2 tsp. dry mustard
  • 8 oz. cooked, diced chicken
  • 2 c. cooked egg noodles
  • 8 Tbsp. flour
  • 2 tsp. or 2 chicken bouillon cube(s)
  • 4 oz cheddar cheese
  • 1 bag (16 oz.) frozen broccoli
Prepare white sauce: melt margarine, add flour stirring constantly, until mixture bubbles. Cook and stir for an additional minute. Add milk and continue stirring until mixture comes to a boil and thickens. Add bouillon, sage, dry mustard and shredded cheese; stir. Stir chicken, broccoli and noodles into sauce. Pour into a baking dish, cover and bake at 350 degrees for 20-25 minutes.
Yield: 8 servings
Serving Size: One eighth of casserole is 1.5 oz meat/ meat alternate, 1/4 cup vegetable and 0.5 oz grain for a 3-5 year old at lunch/supper
