Arugula Pear Salad

Children can often handle more sophisticated flavors than we might think! Give this one a try when arugula is in-season and on-sale.
  • 1/2 c. walnuts
  • 6 cups arugula
  • 1 1/2 c. diced pear(s)
  • 1 lemon
  • 3 Tbsp. olive oil
  • salt and pepper to taste
  • 2 c. shredded cheese
Toast nuts in small pan over medium heat until fragrant. Cool. Combine arugula and pear in a salad bowl, add nuts then dress the salad with lemon juice and olive oil, salt and pepper. Top salad with cheese crumbles. Divide into 6 salad servings.
Yield: 6 salads
Serving Size: 1 salad is 1.5 oz meat/meat alternate and 1/4 cup vegetable for a 3-5 year old at lunch/supper
